Blackberry Lavender Fizz
Ingredients:
• 1 cup sugar
• 1 cup blackberries (save some for garnish)
• 2 tbsp lavender
• 1 cup water
• Apple Marigold tonic
Method:
In a saucepan, combine sugar, blackberries, lavender, and water. Bring to a boil, then reduce heat and let simmer for about 30 minutes, intermittently crushing the blackberries as the mixture thickens. Strain out the solids and let the syrup cool completely before using.
In a chilled coupe glass, add 2oz of the syrup, top with tonic and garnish with fresh blackberries.
