Moscow Mule Mocktail
Ingredients:
• 1 cup sugar
• 2 cups water
• 2 cups fresh ginger
• 1 sprig of rosemary
• 1 lemon
• Apple Marigold tonic
• candied ginger (for garnish)
Method:
In a saucepan, combine sliced ginger, lemon peel, rosemary, sugar, and water. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain out the solids and then let cool completely before using.
Fill a glass with ice, add 2 tbsp of the syrup and a squeeze of fresh lemon juice. Top with tonic and stir gently. Garnish with candied ginger.
